Winter Salad

Very easy and delicious

Ingredients:
1/4 cup low fat mayonnaise
1/4 maple syrup
3 TBSP white wine vinegar
2 TBSP minced shallot
2 tsp. sugar
1/2 cup canola oil
10 oz. mixed salad greens
2 medium tart apples, thinly sliced
1 cup dried cherries or cranberries
1 cup pecan halves
1/4 cup thinly sliced red onion
Directions:
Soak apple slices in lemon water (prevents browning)
In small bowl mix first five ingredients and then slowly drizzle and whisk canola oil. Cover and refrigerate until ready to serve.
To serve, toss all remaining ingredients and drizzle with salad dressing.
Cook's Notes:
Dressing can be made days ahead and stored covered in refrigerator for at least a week.
Salad and dressing can easily be doubled
