Shirleys Potato Salad - by Joe Falke

Creamy, no vinegar potato salad

Total Time:
1 hour including cooking potatos

Ingredients:
5 - 6 potatoes - I use red potato with the skin on
1 onion - I use sweet vadalia
1 stalk celery
1/2-2/3 cup mayonnaise
1/2-2/3 cup miracle whip
2 Tbs cream

Directions:
Wash and boil potatoes. When cool slice potatoes.
chop celery and onion to a small dice.
Mix equal parts mayonnaise and miracle whip. Stir in cream and mix till smooth.
Mix all ingredients together and chill for at least 1 hour - over night works well. I generally mix the onion and celery then place a layer of potatoes a serving spoon of the onion/celery mixture and spread a serving spoon of the dressing and repeat till the ingredients are used up. Then I gently mix it together.
