Roasted Honey Mustard Potatoes

It was outrageously good. I hope my picture does them justice.

Ingredients:
2 lbs. small red potatoes
4 cloves garlic, minced
1/2 tsp. salt
1/8 tsp. white pepper (I used black)
3 tbs. butter, melted
1 tbs. olive oil
1/4 cup honey mustard (I used spicy brown)
2 tbs. honey
1 tbs. Dijon mustard (I used spicy brown)
1 tsp. dried thyme leaves
**I didn’t have honey mustard, so I sort of combined the 1/4 cup honey mustard and 1 tbs. Dijon and used spicy brown. You can just eye-ball it!)

Directions:
1. Preheat oven to 400 degrees.
2. Scrub potatoes and cut them in half or in quarters if larger than 2 inches in diameter.
3. Place in large roasting pan and sprinkle with garlic, salt, and pepper.
4. In small bowl, combine remaining ingredients and mix well. Drizzle over the potatoes and stir to coat.
5. Roast for 45 – 55 minutes, turning potatoes with spatula twice, until the potatoes are tender with golden brown edges. Serve immediately.
